<p>The LA SV HQ packed-up the ol&#8217; Prius and headed north for the holidays. We ate <strong>a lot</strong> of truly delicious things along the way. Here&#8217;s our foodiary:</p>
<p>First stop was Sunnyvale, CA. We celefeasted at <strong><a href="http://www.greatvegiland.com" target="_blank">Great Vegi Land</a></strong>, whose owner stayed open late just for us, so we ordered half the menu! This is the kind of vegan restaurant that also abstains from onions and garlic, two of my favorite things:</p>

<p>We sandwich&#8217;d at<strong> <a href="http://ilikeikesplace.com" target="_blank">Ike&#8217;s</a> </strong>and then <a href="https://twitter.com/SuperVegan">tweeted</a> with the man himself about getting a location for ourselves in LA:</p>

<p>We ate until all the food was gone at <a href="http://www.meritvegetarian.com" target="_blank"><strong>Merit Vegetarian</strong></a>, my fav:</p>

<p>We left Sunnyvale and continued north to Hiouchi, where the food paled in comparison to the trees. We went on a hike through Jedediah Smith Redwoods State Park and found <strong><a href="http://en.wikipedia.org/wiki/Grove_of_Titans" target="_blank">Grove Of The Titans</a></strong>, a secret trove of trees the size of skyscrapers.We actually had a couple other dishes, but they were so good I forgot to photograph them!</p>

<p>An amazing way to ring in the new year!</p>

<p>And a new pair of kicks! Some <strong><a href="http://thepeoplesmovement.com" target="_blank">Movmt</a></strong> sneakers while listening to MGMT courtesy <strong><a href="http://theshoestorepdx.com" target="_blank">The Shoe Store</a></strong>, which has a fabulous vegan footwear selection.</p>

<p>Sadly, we had to leave Vegadise (vegan paradise) and begin the long journey home. Don&#8217;t worry Portland, <a href="http://supervegan.com/blog/author/jason-das/" target="_blank">Jason</a> and I will be back to eat the rest of you during the <a href="http://vidavegancon.com" target="_blank">Vida Vegan Con</a> in May! There was some emergency Taco Belling, but there was also this lovely <em>Summer Harvest Salad</em> (in the middle of winter) with oriental sesame dressing at the <strong><a href="http://blackbeardiner.com" target="_blank">Black Bear Diner</a></strong> in Mt. Shasta:</p>

<p><!-- closes "illowrapper" --> I&#8217;ve said this before but I&#8217;ll write it now: Thanksgiving is the only good holiday for the following, inarguable reasons (please don&#8217;t argue): </p>
<p> 1. It is a holiday where the holiday is eating your body weight in delicious foods, resting, and repeating. Then shopping, if you&#8217;re crazy.</p>
<p> 1.* There is no obligatory gift-giving.</p>
<p> 1.* There is no God or God-like entity involved. </p>
<p> 1.* It&#8217;s not <i>just</i> an excuse for people to act like their worst (drunkest/sluttiest) selves.</p>
<p> *4-way tie for first place in order of importance.</p>
<p> But let&#8217;s face it, Turkeys like Thanksgiving even less than a single lady likes Valentimes. For years, and including this one, we here at SuperVegan have <a href="http://supervegan.com/blog/entry.php?id=1974">published a comprehensive list of places for NYers to eat other things</a>, but now it&#8217;s LA&#8217;s time to shine in gravy. So, without further defrosting, here is a list of places where you can eat-out or order-in in the Greater Los Angeles area. <p> And lest you think this is some olde-timey tradition, naw, Clay&#8217;s Corner has only been doing this since the 1990s. Apparently the inspiration was a suggestion that &#8220;since the possum is Brasstown&#8217;s mascot of sorts, the town should have a live animal drop similar to the dropping of the ball in Times Square&#8221;. Of course. Totally makes sense. Why, it&#8217;s even a &#8220;non-alcoholic family event &#8230; <a href="http://www.clayscorner.com/new-years-eve.shtml">We bring the possum to start the event and then the blessing and then we bring out the queens of the last ten years and show them off&#8230;and the church singing of songs and then the drop</a>.&#8221; Sounds <em>just</em> like what goes down at Times Square every year.</p>
<p> (I learned <a href="http://en.wikipedia.org/wiki/The_Possum_Drop">via Wikipedia</a> that they do an event in Tallapoosa, Georgia also called a Possum Drop, but <a href="http://www.thepossumdrop.com/">as that event&#8217;s website loudly states</a>, &#8220;We Do Not Use A Live Opossum. It Is Stuffed.&#8221; I&#8217;m not sure if that means a fake possum or a taxidermied one, and, well, maybe I don&#8217;t really want to know.)</p>

To take our minds off how to balance being in our favorite bar in such close proximity to sweets, savories, wearables, washables and other assorted odds and ends, we sent <b>Sarah Peltier</b>, the founder of Vegan Shop-Up, our ten most pressing questions! In turn, Sarah sent us her ten best answers! Feel free to read out loud to your loved one(s).</p>
<p> <b>Deborah Diamant: You&#8217;re a year old! How does a vegan pop-up shop celebrate this achievement?</b><br /> Sarah Peltier: We plan to celebrate our first birthday with lots of freebies for everyone! Some of the best vegan-friendly companies around have donated treats: <i><a href="http://www.vegnews.com" title="VegNews Magazine">VegNews</a></i>, <a href="http://supervegan.com/r.php?id=163" title="Babycakes">Babycakes</a>, <a href="http://supervegan.com/r.php?id=662" title="Terri">Terri</a>, <a href="http://www.mooshoes.com" title="MooShoes">MooShoes</a>, <a href="http://supervegan.com/r.php?id=67" title="Foodswings">Foodswings</a>, and <a href="http://www.babeland.com" title="Babeland">Babeland</a>.</p>
<p> <b>DD: Why do you think pop-up shops have gotten so popular the last year or so?</b><br /> SP: They&#8217;re the perfect low-risk venue for companies without a regular location to reach the public. They&#8217;re an enticing shopping experience and a great way for smaller businesses to get noticed.</p>
<p> <b>DD: How many vendors were at your first shop-up, and how many do you expect this weekend?</b><br /> SP: We had a whopping five vendors at the very first Shop-Up last February, and now we are at 32! It grows more and more each time around.<br /> <span id="more-1857"></span></p>
<p> <b>DD: The rumor is that you keep Pine Box Rock Shop really packed during your event. Do you have plans to move to a bigger space?</b><br /> SP: Perhaps if the right space came along we&#8217;d consider it. But, of course, we&#8217;d hate to leave Pine Box Rock Shop, which we really love and appreciate. It&#8217;s a possibility we could span the event over two days next time, too. Our eyes and ears are open!</p>
<p> <b>DD: Are vendors vetted in any way? What do you require from your vendors? Have you had to turn any vendors away?</b><br /> SP: Vendors have to be local and produce quality vegan products. We shy away from having too many of one thing and love variety. We&#8217;ve been turning vendors away from a lack of space! The next Shop-Up is in April and we will have a better approach to accommodating all of our vendors.</p>
<p> <b>DD: Do you yourself operate as a vendor during the Shop-Up? What&#8217;s your business?</b><br /> SP: I have been selling for my own business as well, though it&#8217;s getting harder and harder each time as there is just more to do at the events now. I&#8217;ve had <a href="http://www.woodsidebakehouse.com" title="Woodside Bakehouse">Woodside Bakehouse</a> since 2009, and this Sunday we will be selling handmade organic vanilla extract and Peanutella, plus our signature El Conejo granola bars.</p>
<p> <b>DD: Are there any success stories from the Shop-Up? Like, has anyone been able to quit their soul-sucking graphic design day job yet?</b><br /> SP: Hmm, not that I&#8217;ve heard of, but I&#8217;m excited to see the day! There are a few vendors that sold with us early on but now are just too busy with their rocketing business to take part anymore. <a href="http://sproutskincare.com" title="Sprout Skincare">Sprout Skincare</a> and <a href="http://growninbrooklyn.com" title="Barry's Tempeh">Barry&#8217;s Tempeh</a> are a few!</p>
<p> <b>DD: Can you gauge what percentage of the items for sale are fair trade, organic and/or recycled?</b><br /> SP: I&#8217;d say a good 70 percent are &#8211; it&#8217;s definitely a majority!</p>
<p> <b>DD: I know you&#8217;re gonna tell me you don&#8217;t play favorites, but what vendors are you most excited for this weekend?</b><br /> SP: YES, no favorites. Very important. Each and every vendor is worthy of your time and money, that&#8217;s why it&#8217;s so great! Is this really how we want our tax money spent?</li>

<li>On a lighter note: Sending out holiday cards? <li>Maybe PETA will consider dedicating a stamp to <a href="http://www.metro.co.uk/showbiz/interviews/882785-jessica-chastain-kissing-brad-pitt-is-everything-i-imagined-it-would-be">five-year veghead Jessica Chastain</a>. She&#8217;s not the only vegan to make people think <a href="http://supervegan.com/blog/entry.php?id=760">the chicken she was chomping was &#8220;real.&#8221;</a></li>

<li>For the young compassionate people in your life: The Vegetarian Resource Group is giving away <a href="http://www.scholarships360.org/2011/11/25/the-vegetarian-resource-group-college-scholarships">two &#036;5,000 college scholarships</a> to vegetarian high schoolers graduating in the spring of 2012. If you know a senior who lives and promotes the veg lifestyle, make sure he or she applies by Feb. 20.</li>

In the end, though, my cousin invited me over for an intimate vegan gathering, and for a change, a fake roast was not the centerpiece. She said I didn&#8217;t have to bring anything, that I should consider myself a guest, but my mother would roll over in her grave if I went to someone&#8217;s house and didn&#8217;t bring something, no matter what I&#8217;d been told.</p>
<p> Dinner started a little late because the <a href="http://www.flickr.com/photos/creativekismet/194384608">Butternut Squash Risotto</a> didn&#8217;t seem to want to cook (man, it&#8217;s hard to find a recipe without Parmesan cheese!). But that was fine because I&#8217;d made an appetizer: the Artichoke Puffs from Carol Adams&#8217; <a href="http://amazon.com/exec/obidos/ASIN/1590561163/ref=nosim/supervegan-20"><em>Living Among Meat Eaters</em></a>, tasty, flaky little treats filled with artichoke hearts, mushrooms, roasted red pepper, scallions and garlic. Everyone was surprised I&#8217;d made them because I&#8217;m not a mushroom fan; in fact, they&#8217;re way more mushroomy than artichokey. But these small bites are incredibly savory and flavorful, so if mushrooms are your thing, you&#8217;ll definitely want to pull Carol&#8217;s book off the shelf and flip to the recipe section. There aren&#8217;t many recipes in the book, but the ones that are there were well-chosen, and I&#8217;ve never been disappointed.</p>

<p> When the risotto was finally ready, we sat down to eat. And this is how the meal played out: apple and cabbage salad with sesame-tamari dressing; <a href="http://www.food.com/recipe/vegetarian-portuguese-kale-soup-149098?scaleto=6&#038;mode=null&#038;st=true">Portuguese kale soup</a> with red beans and <a href="http://www.fieldroast.com/products/retail/field-roast-sausages">Field Roast Mexican Sausages</a>; Candle 79&#8242;s <a href="http://kitchenkathleen.blogspot.com/2007/07/cornmeal-crusted-tempeh.html">Cornmeal-Crusted Tempeh</a>, marinated in garlic and ginger (she never got around to encrusting it, but it was still delish!); a mash of parsnip, potato and celery root; and, of course, the risotto. Everything was amazing&#8212;I would make the tempeh any day of the year, and the soup was incredibly flavorful, even if the sausages were way too spicy for my wimpy palate. That said, I would have preferred the risotto seasoned more traditionally; cumin and tarragon just don&#8217;t do it for me. But overall the meal was stellar, as was the company.</p>
<p> Then it was time for dessert. My cousin made the best <a href="http://ohsheglows.com/2011/11/20/vegan-pumpkin-pie-three-ways-classic-rustic-gluten-free">Pumpkin Pie Cheesecake</a> I&#8217;ve ever tasted (she used the classic filling from the spelt crust recipe). Okay, so she bought a premade crust, but she used fresh pumpkin from her CSA share instead of puree from a can&#8212;how&#8217;s that for ambitious? She also made a cashew cream to go on top, but it was incredibly rich, so I opted for a dollop of <a href="http://www.turtlemountain.com/products/product.php?p=purely_decadent_purely_vanilla">vanilla ice cream</a> instead. What can I say, I&#8217;m a purist.</p>
<p> Of course, I&#8217;d made a dessert, too. Though delicious, the cookies were a departure from the route I normally would have taken: Chocolate, my ingredient of choice, gives my cousin migraines, and her husband can&#8217;t digest tofu. So as you can see, my options were limited. Leave it to <a href="http://supervegan.com/blog/entry.php?id=1047">Hannah Kaminsky</a> to save the day! Her Maple Pistachio Cremes, from <a href="http://amazon.com/exec/obidos/ASIN/0979128617/ref=nosim/supervegan-20"><em>My Sweet Vegan</em></a>, were pure genius: a sandwich of simple cookies, sweetened with maple syrup, and filled with a thick, rich pistachio paste. The dough was so delicious, I didn&#8217;t think there&#8217;d be any left to make the cookies with. And the cream was just the right balance of rich and sweet. I&#8217;m always amazed when recipes with very few ingredients pack such a flavor punch, and these treats definitely fall into that category.</p>

He says of his Pecan Pie, &#8220;I&#8217;ve put in as much as 1 cup of chocolate chips in this recipe. I made it once where I mixed the chocolate chips with the Earth Balance while it was still warm and they melted so it wound up being a chocolate pecan pie instead of a chocolate CHIP pecan pie. <p> <strong>Vegan Pecan Pie </p>
<p> Ingredients:</strong><br /> 1/2 cup raw sugar<br /> 1/2 cup brown sugar <br /> 2 tablespoons flour<br /> 4 tablespoons nondairy milk (I use soy)<br /> 2 egg substitutes (I use Bob&#8217;s Red Mill substitute) <br /> 8 tablespoons vegan butter, melted (I use Earth Balance)<br /> 1 teaspoon vanilla <br /> 1 cup pecans <br /> 1 9&#8243; unbaked pie crust</p>
<p> <strong>Directions:</strong><br /> 1. Preheat oven to 375 degrees Fahrenheit.  Mix ingredients.  They come out watery. <br /> 2. Pour into the pie shell. Place on a cookie sheet and put into the oven for 20 minutes.<br /> 3. Reduce oven temperature to 275 degrees Fahrenheit. Bake for 20 minutes or longer. (If you have to do this, put foil around the crust so it doesn&#8217;t burn.)<br /> 4. Check, center should be slightly soft, but if it seems too watery, bake for 20 more minutes. </p>

<p> <strong>Mom&#8217;s Apple Pie</p>
<p> Ingredients:</strong><br /> 8 or 9 McIntosh, or other red baking apple, peeled, and cut into 1/4-inch slices (about 8 cups)<br /> &#8232;1/2 cup sugar<br /> &#8232;1/3 cup light brown sugar<br /> &#8232;1/4 cup all-purpose flour<br /> &#8232;1 1/4 tablespoons ground cinnamon&#8232;<br /> 1/2 teaspoon ground ginger<br /> &#8232;Juice of 1/2 lemon<br /> &#8232;Pinch salt&#8232;<br /> Fast-and-Easy Pie Crust, or 2 store-bought crusts</p>
<p> <strong>Directions</strong><br /> &#8232;1. Preheat the oven to 425 degrees F. Place an oven rack on the lowest level of the oven. &#8232;<br /> 2. In a large bowl, combine the apples, sugar, brown sugar, flour, cinnamon, ginger, lemon juice, and salt. Stir to coat the apples, then set aside.<br /> 3. On a lightly floured surface, roll out half of the pie dough to a 13 to 14-inch round, less than 1/4-inch thick. Add flour to the work surface and dough as needed. Gently transfer to a 9-inch pie plate, pressing it to fill the pan , allowing the excess to hang over the sides. Transfer the apple mixture to the pie plate. <br /> &#8232;4. Roll out the remaining pie dough and gently arrange it over the apples. Cut any overhanging dough that exceeds 1-inch. Use your fingers to seal the dough, rolling the dough from the bottom crust up and onto the top crust, to form a rim around the pie. Crimp the edge with your fingers. Cut 4 or 5 slits in the top crust to allow steam to escape. <br /> &#8232;5. Place the pie on a pie ring or baking sheet to catch the drips. Bake 20 minutes, or until golden brown. Remove from the oven and cover loosely with foil. Bake 30 minutes longer , or until the filling bubbles. Cool slightly before cutting.<br /> Serves 6 to 8</p>
<p> <strong>Fast-and-Easy Pie Crust</p>
<p> Ingredients:</strong>&#8232;<br /> 2 cups all-purpose flour<br /> &#8232;1/4 cup sugar<br /> &#8232;1/2 teaspoon salt<br /> &#8232;1/2 cup cold vegan margarine, diced&#8232;<br /> 1/2 cup cold vegan shortening, diced<br /> 1 tablespoon apple cider vinegar<br /> &#8232;5 tablespoons cold water</p>
<p> <strong>Directions:</strong><br /> 1. In a food processor, combine the flour, sugar, and salt. Pulse to mix. Add the diced margarine and shortening. Pulse to mix until the mixture resembles small peas. Add the vinegar and water through the feeder tube and pulse until the mixture is combined and forms a ball. Divide in half and pat each half into a flat disk. Wrap the disks in parchment paper or plastic wrap. Refrigerate for 1 hour before using.<br /> 2. To bake a pie, remove the dough from the refrigerator and transfer to a lightly floured work surface. Using a lightly floured rolling pan, roll from the center outward until you have an even flat round about 14-inches across and about 1/8 to 1/4-inch thick. Add flour to the work surface as needed. Transfer to a 9 or 10-inch pie plate and gently press so that the crust fits the pan. Repair any tears with wet fingers, if needed.<br /> &#8232;3. If using for a double crust pie, fill according to the recipe. Roll out the second crust and transfer to top of pie. Crimp and bake as directed in recipe. If using this for a single crust pie, crimp the edge, if desired.<br /> Note:  To blind bake, prick the bottom and sides of the crust with a fork. Line with a piece of foil or parchment paper and some loose dried beans. Bake in a 425 degree F. oven until golden, about 12 to 15 minutes. Remove from the oven. Remove the foil and beans. Let the crust cool on a rack then fill as desired.<br /> Makes 2 crusts</p>

<p> <strong>Sweet Potatoes Caribbean</p>
<p> Ingredients:</strong><br /> 2 large sweet potatoes, peeled and cut into 1-inch dice<br /> 2 teaspoons vegan butter<br /> 1 tablespoon plus 1 teaspoon peanut butter<br /> 1 tablespoon plus 1 teaspoon fresh lime juice<br /> 2 tablespoons unsweetened coconut milk<br /> 1/4 teaspoon ground cumin<br /> 1/4 teaspoon ground coriander<br /> 2 teaspoons fresh cilantro, minced<br /> Sea salt and freshly ground black pepper<br /> 2 scallions, trimmed, split lengthwise and cut into 1/4-inch pieces<br /> Pineapple rings, for serving (optional)</p>
<p> <strong>Directions</strong> <br /> 1. Pour an inch of water into a 4-quart saucepan fitted with a steamer.Cover the pan and bring the water to a simmer. Place the sweet potatoes into the steamer insert, cover loosely, and steam for 10 minutes or until tender.</p>
<p> 2. Mash by hand or press the potatoes through a ricer into a medium-size bowl. Add the vegan butter, peanut butter, lime juice, coconut milk, cumin, coriander, and cilantro, and combine well. Taste and adjust the seasoning with salt and pepper, if necessary. Fold in the scallions and mix until well distributed. To serve, transfer to a bowl and serve hot. Alternately, you can scoop the potatoes onto sliced fresh pineapple rings.<br /> Yield: 4 servings</p>

<p> <strong>Deconstructed Green Bean Casserole</p>
<p> Ingredients:</strong></p>
<p> 1 1/2 pounds fresh green beans, trimmed<br /> 3 medium shallots, cut into thin rings<br /> 1 tablespoon olive oil<br /> 6 ounces mushrooms (cremini or shiitake are good), sliced<br /> 1/2 cup minced onion<br /> 2 garlic cloves, minced<br /> 1/2 teaspoon dried thyme<br /> 1/4 teaspoon dried marjoram<br /> 3 tablespoons all-purpose flour (or gluten-free flour)<br /> 1 cup mushroom broth (use a porcini or other mushroom bouillon cube)<br /> 1 cup plain unsweetened nondairy milk<br /> Salt and freshly ground black pepper</p>
<p> <strong>Directions:</strong><br /> <i>Note: Instructions are provided for either roasting or steaming the green beans.</i></p>
<p> Preheat the oven to 425°F. <br /> 1. <i>To steam the green beans</i>: Place the green beans in a steamer pan over boiling water. Reduce the heat to a simmer and cook until the green beans are just tender. Remove from the steamer and set aside.<br /> <i>To roast the green beans</i>: Spread the green beans in a single layer on an oiled rimmed baking sheet. Drizzle with a little olive oil and roast until tender, about 30 minutes, turning once about halfway through. Set aside.<br /> 2. Arrange the shallots on an oiled baking pan and roast until golden brown, about 20 minutes, turning once about halfway through.<br /> 3. Heat the oil in a large skillet over medium-high heat.  Add the mushrooms and saute until softened and slighted browned.  Remove the mushrooms from the skillet and set aside.  In the same skillet, over medium heat, add the onion, cover, and cook until softened, about 5 minutes.  Add the garlic, marjoram, and thyme.  Stir in about half of the reserved mushrooms and sprinkle with the flour. Stir in the broth, stirring to thicken.  Stir in the nondairy milk and simmer, stirring, until thick, about 5 minutes. Season to taste with salt and pepper and transfer to a casserole dish. <br /> 4. Arrange the reserved mushrooms on top of the sauce, then arrange the green beans on top of the mushrooms, with the roasted shallot rings on top.  Serve hot.  If making ahead, the casserole can be refrigerated and then covered and reheated in the microwave or the oven until hot.    <br /> Serves 4 to 6</p>

<p> <strong>Veggie Gravy</p>
<p> Ingredients:</strong></p>
<p> 7 TBSP margarine<br /> 7 TBSP four<br /> 3½ Cups veggie stock (&#8220;chicken&#8221; or &#8220;beef&#8221; flavor preferred)<br /> ½ Cup red wine<br /> 1/3 Cup soy sauce<br /> fresh pepper, rosemary to taste</p>
<p> <strong>Directions</strong></p>
<p> Make a roux with the margarine and flour. This is a fancy French word that means melt the margarine in a pot, then add in the flour and whisk the two together until it forms a sticky paste. </p>
<p> SLOWLY, like ¼ cup at a time, whisk in the stock, wine and soy sauce. If you go too quickly you&#8217;ll get lumps and nobody wants tumorous gravy! Add pepper and rosemary if you like them.</p>
<p> Bring to a boil for about 5 minutes, then reduce heat to a simmer for another 10. Whisk it every now and then for lump and skin prevention. It&#8217;s done when it thickens!</p>
<p> Slather on everything, or drink straight from a glass, we won&#8217;t judge.</p>

<p> <strong>Vegan Maple Syrup Pecan Pie</p>
<p> Ingredients:</strong></p>
<p> Crust:<br /> 1 1/4 cups all-purpose flour<br /> 1/4 tsp kosher salt<br /> 1/2 tsp granulated sugar<br /> 1 stick Earth Balance buttery stick<br /> 3 Tbsp ice water</p>
<p> Filling:<br /> 3 Tbsp cornstarch<br /> 1 cup water<br /> 1 1/4 cups pure maple syrup<br /> 1/2 tsp kosher salt<br /> 2 Tbsp Earth Balance<br /> 1 tsp pure vanilla extract<br /> 2 cups pecan halves, toasted</p>
<p> <strong>Directions:</strong>&#8232;<br /> In a food processor combine the flour, salt and sugar. Add the Earth Balance and pulse until coarse crumbs. Add the water 1 Tablespoon at a time through the top and pulse until the dough comes together.&#8232;Flatten the dough into a disk, wrap in plastic wrap and refrigerate for an hour.&#8232;<br /> Preheat the oven to 400°.<br /> Roll out the dough on a lightly floured board to about 10&#8243; in diameter. Fit the dough into a 9&#8243; pie pan. Trim the dough and flute the edges if you like, prick holes in the bottom and the sides with a fork.&#8232;Bake until golden, about 10 minutes. Take out.&#8232;In a small bowl add the cornstarch, 1/4 cup water and whisk smooth.&#8232;In a medium saucepan add 3/4 cup water and maple syrup. Bring to a boil over high heat, boil for 5 minutes and then the salt and the cornstarch slurry, whisking constantly (be wary when adding the salt, it can start boiling harder). Keep whisking and cook over high until it thickens and becomes a deep brown.&#8232;Take off the stove and whisk in the Earth Balance and vanilla.&#8232;Turn the oven down to 350°. Pour the filling into the crust and smooth out. Add half the pecans, gently pushing down with a spatula and then top with the rest of the nuts, patting down a bit with your hands or a clean spatula.&#8232;<br /> Bake for 30 minutes.&#8232; <br /> Cool on a rack and then keep covered and refrigerated.</p>

<p> You&#8217;re gonna eat vegan things in a week, aren&#8217;t you? Why don&#8217;t you share the most delicious or unique or spirited recipe <a href="mailto:daniellekonyaismyhero@supervegan.com">with me</a> so I can then share it with The Internet?</p>
<p> <strong>Onion and Apple Relish Tofu</p>
<p> Ingredients</strong></p>
<p> 1 package extra-firm tofu, drained and pressed<br /> ½ cup chickpea flour<br /> Salt and pepper to taste<br /> 1 tsp. dried sage<br /> 1 tsp. ground cumin<br /> 2-3 Tbs. vegetable oil<br /> 1 large red, Spanish or Vidalia onion, cut into large pieces<br /> 2 sweet apples, cut into large pieces<br /> 3 Tbs. raw apple cider vinegar<br /> 1 ½ cups low-sodium vegetable broth<br /> 2 Tbs. vegan butter<br /> Parsley, chopped, for garnish</p>
<p> <strong>Directions</strong></p>
<p> Preheat the oven to 200 degrees.</p>
<p> Cut the tofu into 8 slices. I do this by cutting the block in half width-wise, then cutting each half-block into 4 thin rectangular slices.</p>
<p> Put the chickpea flour on a plate. Season it with salt, pepper, sage and cumin. Coat both sides of the tofu slices with the flour. Shake off any excess flour.</p>
<p> Heat 2 Tbs. oil in a large skillet over medium-high heat. Sauté the tofu slices until they are browned and a bit crisp on both sides, about 4 minutes per side. Transfer the tofu to a platter and put it in the oven to stay warm and crisp.</p>
<p> Add the onion and apple to the skillet. If you need more oil, add another tablespoon. Increase the heat to high and cook until the onion is wilted and the apples are golden brown. This should take about 3-4 minutes.</p>
<p> Add the vinegar to pan. Bring it to a boil until the vinegar thickens and becomes syrupy. Add the broth and return it to a boil. Cook until the broth reduces to about half.</p>
<p> Remove the pan from the heat, add salt and pepper. Whisk in the vegan butter until smooth. </p>
<p> Top the tofu slices with the red onion and apple relish. Add parsley for garnish. Serve while hot. Enjoy!</p>

<p> <strong>Blueberry Muffin Bread Pudding</strong></p>
<p> <i>Makes 10-12 servings</i></p>
<p> <strong>Ingredients:</strong><br /> 10 blueberry muffins (<i>your favorite recipe or box mix</i>)<br /> 1 cup fresh or thawed frozen blueberries<br /> 2 cups soy/rice/almond milk<br /> 1/2 cup sugar<br /> Egg Replacer for equivalent of 4 eggs<br /> 2 teaspoons cinnamon<br /> 1 1/2 teaspoons vanilla extract<br /> optional: whipped &#8220;cream&#8221; and fresh berries</p>
<p> <strong>Instructions:</strong> <br /> Preheat oven to 350 degrees.<br /> Crumble ½ of the muffins into a greased baking dish.<br /> Add 1 cup blueberries in a layer.<br /> Crumble remaining ½ of the muffins over the top.<br /> In a bowl, beat together milk, egg sub, sugar, cinnamon and vanilla.<br /> Pour mixture over crumbled muffins.<br /> Bake for 40 minutes, until pudding puffs and forms a crust.<br /> Spoon warm pudding into individual serving dishes and top with whipped topping and fresh blueberries.</p>

<p> <strong>JL&#8217;s Honee Nut Brussels</p>
<p> Ingredients</strong></p>
<p> 3 cups brussels sprouts (halved)<br /> 2 T coconut oil<br /> 2 T <a href="http://www.beefreehonee.com/">Bee-Free Honee</a><br /> 1/4 chopped pecans<br /> Coarse sea salt</p>
<p> <strong>Instructions</strong></p>
<p> Pre-heat oven to 425F.</p>
<p> Cut off the stem of the brussels sprouts and discard any outer leaves that come off naturally (no need to pull off layers). Cut the brussels sprouts in half and place in a large mixing bowl.</p>
<p> In a small bowl whisk the coconut oil and Bee-Free Honee. Pour over the brussels sprouts. Stir in the chopped pecans.</p>
<p> Place a piece of foil on a baking sheet. Place the brussels sprouts, flat side down, on the cookie sheet. Drizzle a bit more Bee-Free Honee over the brussels spouts. Roast for 45 minutes (stir at halfway point).</p>
<p> Remove the brussels sprouts from the oven after 45 minutes and sprinkle a bit of coarse sea salt over it as it cools. Add Bee-Free Honee and sea salt, to taste, to individual servings.</p>
