If you’re on a budget or just the creative type, try making your own chicken-friendly meal at home in celebration of International Respect for Chickens Day.

PETA’s VegCooking website features many vegan chicken recipes. The fried “chicken” prepared using Worthington Chic-Ketts (which can be found in the freezer section of most healthfood stores) are always a hit at parties with vegan and non-vegans who always seem surprised to discover it’s not chicken.

New Yorkers should stop by the Chinatown retail location of faux meat masters May Wah, where we can choose from the somewhat intimidating selection of frozen un-chicken products.

Of course, flesh isn’t the only things chickens are abused for. Whether labelled free-range, organic or otherwise, eggs are always a product of animal exploitation. D.C. animal advcacy group Compassion Over Killing recently ended a sucessful campaign to remove the misleading “animal care certified” label from egg cartons. Try their super easy eggless scramble recipe for breakfast one day. If you really wanna get fancy, try out this Monterey Fritata recipe from the FatFree Vegan Kitchen blog. Mmmm…

Pancakes are an excellent companion to un-egg dishes. I prefer the accidentally vegan Aunt Jemima Whole Wheat Panckae Mix and use one small mashed banana as egg replacer. Isa over at PPK has a few other suggestions for replacing eggs when baking.
