Spring has sprung at the Slo-op, which is offering a veg*an cooking class Thursday, April 5 at 7:30 p.m. There will be noodles with edamame and veggies, a seitan, chickpea and tomato stew with couscous and corn soup with beans, potatoes and a jicama citrus salad–all of which are vegan (with optional non-vegan additions), and all of which can apparently be made in thirty minutes (each, I’m guessing). The class will be taught by Peter Solomita, a graduate of (and now teacher at) the Natural Gourmet Institute for Health. Members and non-members alike are welcome, but all must pay the $4 materials fee; hopefully you’ll get some tasty tastings out of it, though. And if not, you can always stage a revolution!
