Putting two yummy things together in a delectable package seems like a no brainer. Peanut Chews? Delicious. Cookies? Mmm Hmm. Peanut Chew Cookies? Shut Your Mouth!
Admittedly, it took a few college tries to get these cookies to where they are now: a scrumptious amalgamation of deliciousness.

Dry Stuff
1 1/4 Cup unbleached flour
1/2 tsp baking soda
1/8 tsp Salt
Wet Stuff
1 Stick (1/2 Cup) Soy Butter
1/2 Cup + 2 TBS Creamy Peanut Butter
1/3 Cup Vegan Sugar
3/4 Cup Brown Sugar
1 1/2 tsp maple syrup
1 tsp vanilla extract
2 TBS ground flax + 3 TBS Warm Water whisked and allowed to sit
1 King Size Peanut Chew

Sift the dry stuff (A)Beat or mix (well) the wet stuff. (B) You should have a mousse-like consistency. (C) Add your dry stuff to the wet stuff. (D) Your dough should be stiff and not too greasy (E) Cut up your Peanut Chews (I like small squares). (F) Shape dough into 2 inch sized balls and flatten out on greased cookie sheet about 1 to 2 inches apart. Push your Peanut Chew pieces into the top of each cookies. (This is important. Mixing the Peanut Chews directly into the dough will spell disaster!)

on #Stupid question but can soy butter be replaced with margarine? You can’t get the stuff in this country. I’ve understood it’s like a nut butter, but it looks more like margarine in the photo..

In short, yes. Soy Butter is the same as margarine. Not all margarine is vegan though. Check the label! (Many contain lactose or whey)

on #Where on earth is the rest of the recipe for Peanut Chew Cookies. It gives the ingredients and directions, but does not include the baking directions, like what temp and for how long. It says recipe is after the jump, whatever that means. What’s with this???? I am trying to make these for my daughter’s birthday and send them off to her in California.
